Kang Kong or Water Spinach is a staple food of the Philippines when it comes to vegetables. It is rich in vitamins and minerals and is abundant in the country. This is an aquatic tropical vine that is successfully grown in moist soils. This variety has light green leaves and white stems.

Commonly called Water Spinach, Kong xin cai, Kangkong or Ong Choy, the aquatic Ipomoea has many names throughout the world. The leaves resemble spinach with long hollow stems. Almost all young plants are edible, however the tender shoot tips and younger leaves are preferred.

The leaves, which are similar to spinach, are soft and tender and without the oxalic acid taste of ordinary spinach. The advantage of its long, hollow stems is that it holds all the spices it is cooked in and remains crunchy even when wilted. It's no wonder that this is one of the most popular vegetables in Southeast Asia.
