The colleja is one of the autochthonous nutritional plants par excellence throughout the Mediterranean region, and the leaves and tender stems can be eaten, even raw. It is a very fine vegetable, to the point that it is not usually even necessary to remove the cooking water to consume it. Pre-boiling is recommended, but not necessary, to soften the leaf tissues. It can be used in stews, boiled, in a salad or even in an omelette, it is enough to previously fry the leaves, with or without preliminary cooking. Its use as a traditional vegetable has been abandoned over time, probably due to the laboriousness of its preparation, since the leaves must be separated from the stems one by one.
