An Introduction to Kopi Luwak
Kopi luwak is coffee made from the beans of coffee cherries which come out from the other end of the civet cat after they’ve been eaten. Civets were long regarded as pests, But the research nowadays shows that the coffee cherries fermented internally by digestive enzymes of the civets adds a unique flavour to the beans which the resulted beans are the highest quality.
During the night, the civet climbs the coffee trees, uses its eyesight and smell to seek out and eat only the ripest sweet coffee cherries.
This little mammal completely digest the cherries, but does not digest the inner green beans. Instead the green beans were excreted with some layers of the beans still covering.
The civet beans are lower in total protein, indicating that during digestion, proteins are being broken down and are also leached out of the bean. Since proteins are what make coffee bitter during the roasting process, the lower levels of proteins decrease the bitterness of Kopi Luwak which has been described as “earthy, musty, syrupy, smooth and rich with jungle and chocolate undertones.”
