The jujube or Chinese date tree, also called chichourlier in the Languedoc region, is a deciduous shrub native to China, and cultivated in this country for several millennia. Since then, the jujube tree has spread to many areas of the world, such as North Africa, Southern Europe, the Middle East and even the southwestern United States.
This thorny tree can reach a height of 12 m, but generally peaks at 4 or 5 m in height.

The leaves of the jujube tree are deciduous, oval and measure approximately 2.5 cm to 5 cm in length. They are dark green above and paler below.
The yellow flowering of the jujube tree is arranged in clusters, and appears in late spring and early summer. They are very pleasantly scented.
The jujube is an oval fruit that is yellow in color, then brick-red when fully ripe. Its skin is fine and edible, and its translucent white flesh is sweet and fragrant. This fruit is eaten either fresh, in jam or candied, a bit like dates. It is a very nutritious fruit, very rich in vitamin C.
