Known in England 600 BC. A winter and spring vegetable prized for its resistance to heavy frosts, used as fresh or dried beans. Eat fresh from a pod such as peas, or the dried seeds are excellent cooked for casserole recipes and boiled as a Greek-style salad with avocado and garlic, also used to make hummus.
