30 Seeds Plant Scorzonera / Oyster Root Seeds

Scorzonera, aka Black Salsify or Oyster Root, is a relatively unknown edible plant in the daisy family, Asteraceae. It originates in Eastern europe, but is beginning to gain popularity accross the globe due to its unique culinary value. The roots taste remarkably like oysters when cooked, and can be used to either compliment a seafood dish, or add a seafood like flare to a dish. They are tender, and have a pleasant sweetness too. The roots taste best when harvested anytime between late autumn and spring because the cold weather and frost enhances their sweetness. These easy to grow plants are perennial, and are hardy down to zone 5. Once established, they don't require much attention other than regular waterings, and a good layer of mulch to help regulate soil temperatures. This is an excellent plant to include in a permaculture style veggie garden.

Growing Instructions:

Its best to sow Scorzonera seeds directly in the earth as soon as chances of frost have passed; for us at the farm, this is around early to mid May. Sow the seeds 1/4 inch below the soil surface. Seeds can take between 2-4 weeks to germinate, but they can sometimes take less time too. These plants do best when spaced every 6-8 inches. Scorzonera grows best in full sun, and enjoys consistently moist soil. The plants are very disease and pest resistant too.
