U.S. Addresses Only Cabbage Seeds - Copenhagen Market Heirloom Days to Maturity: 72 days An early ball-head type heirloom cabbage, Copenhagen Market is an excellent cabbage that has been an favorite of gardeners, market growers and cabbage fans all over the world. Copenhagen Market has literally set the standard as the model for all commercial cabbage varieties developed since. Copenhagen Market features well-rounded, solid heads, 4 to 5 lbs and 6 to 8 inches in diameter with uniform maturity. Compact plants have short stems and sit close to the ground. Heads hold well in the field without splitting. This tight, well formed head allows the gardener to get far more cabbages in a small space compared to other varieties. Copenhagen Market Cabbage is a fantastic keeper with tight heads that rarely split. Great for slow cooking, slaws and sauerkraut. This is a short season variety especially valuable for early planting but is not recommended for over-wintering in the Northern United States. Normally does fine over-wintered in the Southern States where the winters are not as harsh. GENERAL GROWING INFORMATION Sowing: For spring cabbage start indoors in midwinter and transplant in 3-4 weeks. For fall cabbage start in May and transplant in 3-4 weeks. Sowing Depth: 1/8 inch Germination: 6 - 10 days Sun: Full Sun Height: 12-14 inches Spread: 25 inches Botanical Name: Brassica oleracea When To PlantCabbage is a cool-season vegetable suited to both spring and fall. The trick to growing cabbage is steady, uninterrupted growth. That means rich soil, plenty of water and good fertilization. Set out new spring plants early enough so that they can mature before the heat of summer, about 4 weeks before the last frost. You can also plant through black plastic to help warm the soil in spring. New plants just out of a greenhouse need to be protected from freezing weather. Plant fall cabbage 6 to 8 weeks before the first frost. Growing plants that have been exposed to cool weather become “hardened” and are tolerant of frost. Cabbage that matures in cool weather is deliciously sweet. Like most vegetables, cabbage needs at least 6 hours of full sun each day; more is better. It also needs fertile, well-drained, moist soil with plenty of rich organic matter. The soil pH should be between 6.5 and 6.8 for optimum growth and to discourage clubroot disease. Spacing & Depth Cabbage is easy to transplant. Set plants so that 1-2″ of the main stem is buried. Space 12 to 24 inches apart in a row. For maximum size, be generous with the spacing. Care Cabbage demands even moisture to produce good heads. Mulch with compost, finely ground leaves, or finely ground bark to keep the soil cool and moist and to keep down weeds. Water regularly, applying 1 to 1.5 inches of water per week. Fertilize plants with a liquid fertilizer such as fish emulsion or 20-20-20 after they begin to develop new leaves and when they start forming heads.
