Full of Beans is full of recipes featuring beans or flours made from beans. While it is not purely vegetarian, recipes that include meat are scarce. It was sponsored by the Ontario Coloured Bean Growers Association and published in co-operation with the Canadian Celiac Association. It is chock-a-block with recipes for soups, salada, casseroles, and stews, even sections of breads and desserts.
Beans, also called pulses, have been in and out of favor in Western cuisine and are currently experiencing a revival as we get fatter and sicker. The fact is that beans are nutritious, economical and even if you choose the dried bean route, with the advent of One Pot Pressure Cookers, preparing them is a breeze.
