Shun's Premier line brings the world-famous performance and elegance of their Classic knives, with premium handles and the exotic tsuchime finish. I've yet to encounter any cutlery that feels so natural, looks so good, or performs so well. Use this knife for effortless food preparation where a smaller knife isn't quite enough and a full-sized chef's is far too much, while increasing the life of your entire set and safely using the correct blade for the task. Whether to start or supplement a set, this knife is certain to change your culinary experience just as it has for professional chefs worldwide.

Product Description:

Shun crafts their Premier Chef Knife using VG-10 steel which is layered with 16 layers of high-carbon stainless steel on each side of the blade. The blade features a tsuchime finish, meaning 'hammered' in Japanese. This finish does two things: it gives the knife a look that is reminiscent of the handcrafting techniques of ancient Japan; and creates tiny pockets of air that act as hollow-ground cavities, reducing drag and quickly releasing food from the blade. The premium handle is ambidextrous and provides a comfortable, controlled grip; it is accented with a brass ring and the end-cap is embossed with the Shun logo. Combine all of these features with the sharpest Japanese edge available and you have perfection.
