Large Beans
Large white flat beans, also known as “tsali”. Ideal for soup or salad
RECIPS
Ingredients
500gr. 3alfa large beans
350gr. country sausage with leek
2 small celery stalks
1 large peeled onion
2 carrots
1 stalk fresh oregano
2 stalks dill
1 tomato, quartered
1 coffee cup finely chopped dill
1 small onion, finely chopped
1 carrot, grated
1 coffee cup olive oil
the juice of 1 lemon
1 tbsp. mustard (French type)
1 tsp. tomato paste

Cooking method
Soak the beans the night before in plenty of water. The next day, boil them in 2 liters of water, adding the celery stalks, the onion, the carrots, the fresh oregano stalk, the dill and the quartered tomato. Boil them patiently for 1 hour and 15 minutes until they are tender but still intact. Strain them and discard of all the herbs. Leave the beans to the side to cool. Prepare the salad dressing. Add the oil, the lemon, the mustard and the paste to the blender. Blend until you have a homogenous mixture. If it is too thick, thin it by adding 2 spoonfuls of water. Slice the sausage and grill it until it browns. In a salad bowl, place the boiled beans, the grilled sausage, the finely chopped onion, the grated carrot and the dill. Season with salt and pour in the dressing. Mix together and serve the salad as a main course
