This plant grows fast and you can harvest the crop in Late autumn. Salsify is not demanding to soil, but grows best in light loam or sandy loam soils. Keep the sown seeds from being eaten by birds.
Root-stems, leaves and shoots are edible. The root vegetable is dug out before the frosts come.
Rootstocks are suitable for cooking or frying in butter, they may be added to stews. They have high insulin content therefore are recommended for diabetics. Sprouts of young leaves in spring are cut for salad, and young shoots are stewed and eaten like asparagus. White shoots that sprout over the winter in the basement can be also used for salad.
