Hirschhornsalz - Ammonium Carbonate
Ostmann Ammonium Carbonate is very active leavening agent with typical taste which develops its relaxation effect in the heat of the oven.
It is used mostly together with potsh for level akes. However, beside the typical use in the sweet Christmas baker's, e.g., for honey and ingerbread, it can be also processed in piquant level cookies.
Dissolve 1 TL Ostmann Ammonium Carbonate in 1 tablespoon of water and add to flour.
