Shun Classic 7.5" Hollow Ground Sumo Santoku Knife, model DM0762; made in Japan.
Shun's Classic line brings performance and elegance to the kitchen that must be experienced to be believed. I've yet to encounter any cutlery that feels so natural, looks so good, or performs so well. The Santoku, whose name means 'three virtues,' is considered one of the most versatile knives and will be found useful in any kitchen. This Sumo Santoku earns its name for extra width. It excels at cutting through larger foods, such as whole eggplant, yet is just as comfortable to use on a scallion. Those familiar with the advantages of a Chinese vegetable cleaver will find this knife can be pushed through food in a similar manner while keeping the knuckles away from the cutting surface. Whether to start or supplement a set, this knife is certain to change your culinary experience just as it has for professional chefs worldwide.
Shun crafts their Classic Sumo Santoku Knife using VG-10 steel which is layered with 16 layers of high-carbon stainless steel on each side of the blade. During the finishing process the layers are exposed while creating a beautiful pattern that not only protects the VG-10 core, it simultaneously creates a blade surface that resists food sticking to it--a real time-saver for kitchen preparation. D-shaped handles are designed after the Japanese tradition and provide a comfortable, controlled grip. Combine all of these features with the sharpest Japanese edge available and you have perfection.
